If she's still spending a lot of time on the nest, the two remaining eggs should develop fine. The hot weather can definitely affect her brooding, so keep monitoring her. If she starts abandoning the eggs, I'd suggest getting an incubator to keep the eggs warm.

Have you checked their legs and feet for scaly leg mites? Sometimes if chickens have an ongoing mite infestation, it can spread to their legs, making them more uncomfortable and possibly leading to further stress-related feather loss.

Sudden twitching could be anything from crop issues to mild neurological quirks. Try some scrambled eggs with vitamin E for a boost and see if it helps. If it persists, you may want to isolate and monitor her for a few days.

I understand your concern, as hawks can be a huge threat. What helped me was setting up a permanent run with a roof or netting to give them space without wandering off. As for feeding, corn scratch might work, but chickens can be pretty independent and won't always be fooled into staying put. The ...
