You could try isolating her for a day or two in a quiet space to monitor her behavior more closely. Sometimes rest can help reveal what is going on.

I'd go with keeping them in the covered space. You never know when a predator might take advantage of your absence. Better safe than sorry!

I usually stick to around 10-15% oats in the mix during winter. Too much can dilute protein too much, but in moderation, it helps keep them warm and active!

I prefer to cull excess cockerels early, around 14-16 weeks, while letting the pullets grow out longer for eggs before deciding.
