For deep litter, I added a second layer of bedding after a few weeks, and that kept it from getting too messy. If your chicks are picky, you could try experimenting with different bedding materials, like pine shavings or straw. Vinegar works well for cleaning and doesn't pose a risk to your chickens, but if you're going with bleach, make sure it's well-diluted and aired out thoroughly.

In my experience, vinegar does enough for regular cleaning, especially if you clean often. I only use bleach if there's a serious need for it. As for bedding, I've had similar issues with the deep litter method, but I found it helped when I added more bedding and used a larger area for them to roam in.
